Pasta with Pesto, Tuna and Mozzarella

Solid Light Wild Tuna in Olive Oil

Preparation

  1. Bring a large pot of salted water to a boil.
  2. Wash the basil and blend it with the olive oil, Parmesan, pine nuts, a pinch of salt, and cream cheese to make a smooth pesto.
  3. Cut the mozzarella and tomato into small cubes and mix with the drained, flaked tuna.
  4. Cook the pasta according to package directions. Two minutes before draining, add 2 Tbsp of the pasta cooking water to the pesto to make it smoother.
  5. Drain the pasta and immediately toss with the pesto. Add the tuna, tomato, and mozzarella mixture and serve right away.
