Pasta with Pesto, Tuna and Mozzarella
Preparation
- Bring a large pot of salted water to a boil.
- Wash the basil and blend it with the olive oil, Parmesan, pine nuts, a pinch of salt, and cream cheese to make a smooth pesto.
- Cut the mozzarella and tomato into small cubes and mix with the drained, flaked tuna.
- Cook the pasta according to package directions. Two minutes before draining, add 2 Tbsp of the pasta cooking water to the pesto to make it smoother.
- Drain the pasta and immediately toss with the pesto. Add the tuna, tomato, and mozzarella mixture and serve right away.
